Blistered Green Beans


  • 1 pound green beans, trimmed and cleaned 
  • Olive oil
  • Kosher salt 
  • 1 tablespoon red wine vinegar
  • 2 tablespoons pistachios, finely chopped
  • 2 oz feta, crumbled 
  • 10 mint leaves, chopped 


Preheat oven broiler to high. 

Toss green beans with olive oil to coat and sea salt. 

Place on a rimmed baking sheet (do not use parchment). 

Put green beans under the broiler and cook for 5-6 minutes or until they begin to char on one side. 

Remove from the oven and toss with remaining ingredients.
