Citrus Avocado Salad

Ingredients

  • 1 bunch of arugula
  • 1 large grapefruit
  • 1 blood orange
  • 1 avocado
  • 3 small radishes
  • 1/4 cup pepita seeds
  • 2 oz goat cheese
  • 1 teaspoon of olive oil
  • Pinch of salt & freshly ground pepper

For Dressing

  • 1/3 cup of olive oil
  • 1/4 cup of apple cider vinegar
  • 1 teaspoon lemon juice
  • 1 teaspoon dijon mustard
  • 1 teaspoon honey
  • Pinch of salt & freshly ground pepper

Preheat oven to 350°.

On a baking sheet, toss pepita seeds, a teaspoon of olive oil, a pinch of salt & fresh ground pepper. Bake seeds in oven for 10 minutes or until toasted and light golden brown.

Place arugula on a large serving dish. Peel & section grapefruit & blood orange. Thinly slice into quarter size pieces.

Thinly slice up radishes and dice up avocado. Toss citrus, radish & avocado with the arugula.

Sprinkle toasted pepita seeds & crumbled up goat cheese on salad.

Whisk all ingredients together for dressing & evenly drizzle dressing on salad.
