Harvest Moon Roasted Tomato Pesto


1 cup slow roasted tomatoes

½ cup walnuts, roasted

¼ cup grated parmesan cheese

¼ cup olive oil

2 tablespoon balsamic vinegar

½ cup basil leaves



Place all ingredients in a food processor and pulse until well combined, about 1-2 minutes.

Refrigerate in an airtight container. Enjoy over pasta, fish or with a lovely piece of bread.
