Shaved Collard Greens Salad


  • 2 bunches Collard greens (or other dark leafy green), washed and stems removed
  • 4 tablespoons apple cider vinegar 
  • 3 tablespoons olive oil 
  • 1 teaspoon toasted sesame oil 
  • 1/2 teaspoon kosher salt 
  • 1 teaspoon Dijon mustard 
  • 1 tablespoon nutritional yeast 
  • 1/2 cup savory granola 


Place the vinegar, oils, salt, mustard and nutritional yeast into a bowl. Whisk to combine. Stack several leaves of greens at a time and roll them tightly. Using a sharp knife, cut into 1/4” ribbons and place into a large bowl.

Add the vinaigrette and toss with the greens, gently massaging for 1 minute. 
Add the granola and toss.
