Melon Gazpacho


  • 1 medium melon; seeded, peeled and chopped 
  • 2 cups cucumber, chopped 
  • 1 yellow bell pepper, seeded and chopped 
  • 1 small shallot, chopped 
  • ½ cup extra virgin olive oil 
  • 2 tablespoons white wine vinegar
  • 2 teaspoons kosher salt
  • 2 tablespoons cilantro leaves 
  • Freshly ground black pepper 


Place melon, cucumber, bell pepper and shallot in a blender and blend until well combined.

Add olive oil, vinegar and salt, blend until smooth. 

Garnish with cilantro and black pepper.
